The Curious Cabinet's foundation traces back to when Pia, the founder, was expecting a child during the holiday season. Frustrated with the monotony of soda water, lemon, lime, and bitters and missing out on festive cocktails, Pia's curiosity was piqued by an article about Shrub syrups. The decision to craft her own led to an instant fascination with the traditional method that blends the sweetness of fruit and sugar with the tanginess of apple cider vinegar, sparking a passionate endeavour.
The Curious Cabinet was launched and now boasts a diverse lineup of 16 products.
Embracing a low-waste philosophy, the company takes pride in creating an array of delicious preserves and pantry items, utilizing the surplus fruit from their Shrub Syrup production. This approach not only minimizes waste but also maximizes the usage of quality ingredients, ultimately offering more delightful treats for customers to savour.

Pia Cook’s jewel-like liquid creations in their stunning bottles are a thing of beauty and delight. Pia is fascinated with the shrub elixir, a combination of sugar, vinegar and fruit. “It’s an American colonial-style drink from before they had refrigeration,” she said. If this wasn’t enough, she makes delectable jams and interesting treats with the leftover fruit, such as her Bourbon & Chocolate Cherries, which are sensational on top of vanilla or chocolate ice cream.
