Patient Wolf


Matt Argus and Dave Irwin are the founders of Patient Wolf Distillery. In their Southbank-located distillery, they make gins using Melbourne’s delicious water, infusing every drop with style and appreciation for their craft. “Good things take time. We like to think we balance our patience with a hunger to create something pretty damn good”, says Matt.

Technology fused with Tradition.


Patient Wolf blends the traditional with the new, best typified by their German handmade 220L Müller copper still. It took a year to make and uses a new technology that increases copper contact with the spirit to produce a more pure, refined aromatic distillate. And this approach is reflected in their contemporary interpretation of gin distilling. Their crucial mix of attitude, insight, knowledge, native and exotic botanicals, citrus, and innovative distilling process define their hand-crafted gin.
