Mike Juleff: Crafting Heritage Ciders with Precision and Passion.

Mike Juleff is a craftsman. With his background as a chemical engineer, his attention to detail and interest in precision is impeccable. He studied methods used by cideries both in France and the UK, and by applying his knowledge of science, Mike’s preservative-free cider is a taste that has rarely been tasted in centuries. The Crucible cider ages like a fine champagne, so enjoy yours now or cellar it, to allow its full and complex flavours to develop.
Over 20 years ago Mike started establishing the cider orchard with 28 French and English heritage varieties of cider apples, specifically choosing a mix for the optimum bitter-sweet/bitter-sharp/tannin characteristics that he needed to achieve the flavours and heritage characters for his award-winning ‘Méthode Traditionelle’ cider and perry.

Mike's Heritage Ciders: 28 Varieties, Champagne-Quality Taste.

Mike utilises 28 varieties of organically-grown heritage English and French cider apples, carefully hand-crushed in small batches directly on the farm. All their ciders undergo fermentation using champagne yeast through the méthode traditionnelle, the same process used in making champagne, ensuring a product of exceptional quality and taste.
