Chai Addict's Dirty Chai Tiramisu

A delightful twist on a classic Italian dessert, this Dirty Chai Tiramisu combines the bold flavours of chai with rich mascarpone cream. Perfect for individual servings, this indulgent treat layers soaked savoiardi biscuits with creamy goodness, creating an irresistible dessert that’s both comforting and sophisticated.

Ingredients:

  • 8 eggs, separated
  • 8 tbsp caster sugar (for egg whites)
  • 1 cup caster sugar (for egg yolks)
  • 500ml thickened cream
  • 500g mascarpone cheese
  • ½ cup Dirty Chai concentrate
  • ½ cup water
  • 20 savoiardi biscuits
  • To serve: cocoa powder, chocolate shavings

Method:

Italian Cream:

  1. Whisk egg yolks and 1 cup caster sugar until creamy and smooth.
  2. Add thickened cream and mascarpone, whisking until pale and thickened.
  3. In a separate bowl, whisk egg whites until medium peaks form. Gradually add 8 tbsp caster sugar and continue whisking until stiff peaks form.
  4. Gently fold the egg white mixture into the yolk mixture, combining thoroughly but gently to maintain a light texture.

Layer It:

  1. Combine Dirty Chai concentrate and water in a shallow bowl.
  2. Quickly dip savoiardi biscuits in the chai mixture and place two biscuits at the base of each serving glass (8 glasses total).
  3. Cover with a layer of cream and repeat the process, alternating layers of biscuits and cream until the glass is filled.
  4. Refrigerate for at least 3 hours to allow flavours to meld.

To Serve:

  1. Dust each serving with cocoa powder and top with chocolate shavings. Serve chilled.
