Ingredients

Rice Pudding

Caramelised Apples

  • 1/3 cup coconut sugar
  • 2 tbsp water
  • 2 Granny Smith apples, peeled, cored, and sliced into eighths
  • 1/2 cup coconut cream

Method

The Rice

  1. In a saucepan, combine the Chai Harder concentrate, coconut cream, arborio rice, coconut sugar, salt, and vanilla.
  2. Bring the mixture to a gentle simmer over medium heat.
  3. Cook for about 25 minutes, stirring regularly until the mixture thickens and the rice is tender. Remove from heat and set aside.

Caramelised Apples

  1. Heat the coconut sugar and water in a frying pan over medium heat. Stir until the sugar dissolves and forms a light golden caramel.
  2. Add the apple slices and cook for about 4 minutes on each side until softened and golden. Remove from heat.

The Sauce

  1. Pour the coconut cream into the pan with the remaining caramel.
  2. Stir to lift the caramel from the pan and simmer gently until a smooth sauce forms.

To Serve

  1. Divide the chai rice pudding into bowls.
  2. Top with caramelised apples and drizzle with the coconut caramel sauce.

Notes

For an extra touch, sprinkle with cinnamon or toasted nuts before serving. Perfect as a winter dessert or a comforting treat anytime.
