This Garlic Prawn Linguine is a perfect balance of spice, zest, and richness, making it an ideal choice for an elevated midweek meal or special dinner occasion.

Ingredients:

  • 400g linguine pasta
  • 300g large prawns, peeled and deveined
  • 4-5 cloves garlic, finely minced
  • 2 tbsp CRUNCHY CHILLI OIL
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1/2 tsp red chilli flakes (optional)
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste
  • Grated Parmesan cheese (optional)

Instructions:

1. Cook the Linguine:

  • Bring a large pot of salted water to a boil.
  • Cook linguine until al dente, as per package instructions.
  • Reserve 1/2 cup of pasta water and drain the rest.

2. Cook the Prawns:

  • Heat olive oil in a large skillet over medium-high heat.
  • Sauté prawns for 2-3 minutes per side until pink and cooked through.
  • Season with salt and pepper, then set aside.

3. Make the Garlic & Chilli Oil Sauce:

  • In the same skillet, reduce heat to medium.
  • Add CRUNCHY CHILLI OIL, garlic, and onion. Sauté for 1-2 minutes until fragrant.
  • Add chilli flakes if desired for extra heat.

4. Combine Pasta and Sauce:

  • Add cooked linguine to the skillet, tossing to coat in the sauce.
  • Stir in reserved pasta water as needed for a silky texture.

5. Finish the Dish:

  • Return prawns to the skillet. Add lemon zest and juice, tossing well.
  • Adjust seasoning with more salt and pepper if needed.

6. Serve:

  • Plate the linguine and prawns.
  • Drizzle extra CRUNCHY CHILLI OIL for added heat and flavour.
  • Garnish with parsley, grated Parmesan (optional), and extra chilli flakes if desired.
