Keating and Co's Seafood Roll
Ingredients:
- 1/2 cup + 1 tablespoon Mad Mango Hot Sauce
- 400g Cooked Prawns (sous vide or poached), shelled and cleaned
- 200g Crab Meat
- 1/2 cup Mayonnaise (whole egg or homemade)
- 2 teaspoons Lemon Juice
- 1 tablespoon Chives (chopped)
- 1 teaspoon Sweet Paprika
- 1 Cos Lettuce
- 4 Soft Rolls
Method:

Prepare the Sauce:
In a bowl, combine the mayonnaise, Mad Mango Hot Sauce, and lemon juice. Whisk well to combine. -
Mix the Seafood:
Add the cooked prawns and crab meat to the sauce mixture. Gently stir to combine. -
Prepare the Rolls:
Open the soft rolls and line them with fresh cos lettuce. -
Assemble the Rolls:
Add the seafood mixture on top of the lettuce in each roll. -
Garnish:
Top with chopped chives and a sprinkle of sweet paprika. -
