Keating and Co's Seafood Roll

Ingredients:

  • 1/2 cup + 1 tablespoon Mad Mango Hot Sauce
  • 400g Cooked Prawns (sous vide or poached), shelled and cleaned
  • 200g Crab Meat
  • 1/2 cup Mayonnaise (whole egg or homemade)
  • 2 teaspoons Lemon Juice
  • 1 tablespoon Chives (chopped)
  • 1 teaspoon Sweet Paprika
  • 1 Cos Lettuce
  • 4 Soft Rolls

Method:

  1. Prepare the Sauce:
    In a bowl, combine the mayonnaise, Mad Mango Hot Sauce, and lemon juice. Whisk well to combine.

  2. Mix the Seafood:
    Add the cooked prawns and crab meat to the sauce mixture. Gently stir to combine.

  3. Prepare the Rolls:
    Open the soft rolls and line them with fresh cos lettuce.

  4. Assemble the Rolls:
    Add the seafood mixture on top of the lettuce in each roll.

  5. Garnish:
    Top with chopped chives and a sprinkle of sweet paprika.

  6. Serve:
    Serve with a side of pomegranate, avocado and pear salad, chips, or a garden salad.
