Keating and Co's Prawn & Chorizo Tacos

Keating and Co's Prawn & Chorizo Tacos are a vibrant and flavourful dish, combining juicy prawns, spicy chorizo, and the tangy kick of Mad Mango spice blend, all wrapped in soft, grilled tacos. This easy recipe is perfect for a delicious meal or snack.
Ingredients:
- 500g Prawn Meat
- 1 Chorizo (cubed)
- 1 tablespoon Mad Mango (spice blend)
- 1 teaspoon Barkly Basics Gourmet Extra Virgin Olive Oil
- 1 Lemon (juiced)
- Homemade Soft Tacos (or use Mission Street Tacos)
- Butter (for greasing)
Method:

Cube the chorizo and marinate it in ¼ of the lemon juice.

Mix the prawn meat with 1 tablespoon of Mad Mango and 1 teaspoon of olive oil.

Butter one side of the tacos.

Heat the BBQ plate and grill.

Cook the prawns and chorizo separately on the hot plate for 5 minutes.

Add additional Mad Mango to the prawns and combine them with the chorizo on the hot plate. Cook until the prawns are slightly crispy.

Place the tacos on the grill, butter side up, until they become puffy.

Dip the tacos in the oil from the chorizo and place them back on the grill until slightly charred.

Serve with Jitman Salsa and a squirt of lemon.
